Vegan Chorizo Con Pappas









If you’re fortunate enough to live in an area that sells soyrizo by all means that’s a great product. It’s so easy to make your own chorizo so give it a shot. This recipe makes about 6 tacos

Vegan Chorizo con Pappas Tacos

1 12 oz. package of extra firm tofu

2 Tbs chili powder

1 1/2 Tsp paprika

1 1 /2 tsp onion powder

1 tsp garlic powder

1/2 tsp salt

1 tsp ground coriander

1 tsp ground comino

2 Tbs white vinegar

3 small – med. sized potatoes (peeled & cut into 1 inch cubes)

4 Tbs. grapeseed oil

6 Tortillas

open the tofu package and throw away the water that the tofu is stored in but don’t drain the tofu. Place tofu in a bowl with all the spices, and the vinegar. Mix with a fork until tofu is broken up and all the spices are fully combined. Leave “chorizo” mix aside while you peel & chop the potatoes. In a large skillet heat about 2 Tbs. of grape seed oil over med. heat, when oil is hot add the potatoes, cover and cook for 5 min. undisturbed without removing the lid. In a cast iron skillet heat 1-2 Tbs. oil over med heat and add chorizo mixture. Cook for about 2 min. each side. mixing and flipping after each 2 min. segment until chorizo has lost most of it’s moisture & is browning. By now you can remove the lid on the potatoes, add some salt and pepper, flip and cover again. Cook for another 5 min. undisturbed. When chorizo is cooked to desired consistency add to the potatoes and mix. Cook chorizo and potatoes together for about 5 min. until everything is fully combined. Heat tortillas and serve.
